삼겹살 김치찜 Braised Pork Belly & Aged Kimchi (GF, DF)

We set aside some kimchi to age it specifically for this dish! Braised for two hours in an anchovy and kelp broth, the pork belly is super tender and the kimchi tears easily. This dish is very red, but it's not as spicy as it looks! Spice level medium. 

REHEATING RECOMMENDATION 
Microwave, or stovetop with a splash of water to make up for the extra reduction.
