김치찜 Kimchi Jjim - Braised Aged Kimchi with Pork (GF, DF)

We set aside some kimchi to age it specifically for this dish! Braised for two hours, the pork is super tender and the kimchi tears easily. 

REHEATING RECOMMENDATION 
Stovetop or microwave both work perfectly fine for this dish.
