오이소박이 Stuffed Cucumber Kimchi (GF, DF)

Delicious and refreshing, this is a quick pickled kimchi. The cucumbers are sliced halfway through and then stuffed with chives and extra sauce. We like to use our kitchen shears to cut them through right before eating. Best eaten within one week of delivery. 

INGREDIENTS 
Cucumbers, Chinese chives, gochugaru, garlic, ginger, green plum extract, sugar, fish sauce, salted fermented shrimp (새우젓).
